STRAWBERRY JELLY 
2 c. (1 qt.) mashed strawberries

Blend in 4 cups sugar and let stand for 20 minutes, stirring every few minutes. Boil 1 cup water and add 1 package Sur-gel (don't use Certo) and stir in and let boil for one minute. Immediately add this mixture to the berries and stir constantly for 3 minutes. Pour into jars and cover. Let stand at room temperature overnight if possible. Next day either freeze or refrigerate.
