FRENCH TOAST WITH CHEESE AND
MIMOSA SAUCE
 
8 slices 1 1/2 inch thick, French or Italian bread
3 lg. eggs
1/2 c. milk
1/2 c. orange juice
1 (7 1/2 to 8 oz.) farmer cheese, grated
3 tbsp. honey
1 tbsp. grated orange peel
3 tbsp. butter
Confectioners sugar

Make a horizontal pocket in each slice of bread and set aside. Beat eggs with milk and orange juice and pour in shallow baking dish. In small bowl blend cheese, honey, and orange peel. Spoon filling into bread pockets, and press gently to reclose.

Place bread slices in baking dish and soak for 15 minutes, turn and soak additional 15 minutes. In medium skillet, melt butter, fry bread slices until golden brown, drain on paper towels and place on serving platter, sprinkling with confectioners sugar. Serve hot with Mimosa sauce.

MIMOSA SAUCE:

1 c. orange juice
1 tbsp. cornstarch
1/2 c. dry champagne or white wine
2 tbsp. honey
1 orange, peeled and sectioned
1/2 c. sliced strawberries

In medium saucepan whisk juice and cornstarch until blended. Stir in champagne, place over medium high heat. Stir constantly until sauce thickens and boils. Boil 1 minute. Remove from heat, stir in honey, oranges, strawberries, and serve.
