SPINACH BACON SALAD 
2 bunches spinach
1 head red or green leaf lettuce
1/2 lb. crisply fried bacon, crumbled
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. dry mustard
3 tbsp. cider vinegar
1/2 c. salad or olive oil
3/4 c. lg. curd cottage cheese
1-2 tbsp. poppy seeds

Thoroughly wash and dry spinach and lettuce. Break off stems and tear. Make dressing of sugar, salt, mustard, vinegar, oil and poppy seeds. Shake well.

Mix half of dressing to cottage cheese. Toss greens with remainder of dressing and bacon. Add cottage cheese mixture and toss again.
