SPINACH AND BACON SALAD 
1 pkg. (10 oz.) fresh spinach
1 bunch red leaf lettuce
3-4 slices bacon

DRESSING:

1/4 c. sugar
1 tbsp. onion juice (scraped from onion)
1/2 c. cooking oil
1/3 c. vinegar
1 tbsp. poppy seed (optional)
1 tsp. salt
1 tsp. dry mustard
1 c. large curd cottage cheese

Combine sugar, salt, mustard, onion juice, vinegar and cooking oil. Shake or beat well. Add poppy seed if used. Shake again. Use half the dressing to toss with the greens. Add cottage cheese to remaining dressing, add to greens and toss lightly again.
