POTATO SAUSAGE 
3 lbs. ground beef
6 lbs. potatoes, ground
3 lbs. ground pork shoulder
4 lg. onions (more if desired)
4 tbsp. salt

Measure 2 1/2 tablespoons whole allspice; grind it and add to mixture with salt. Mix thoroughly. Usually a pound of casing will suffice. Soak casings in cool water, then run water through them before stuffing. Work steadily or potatoes turn black. Cook immediately. Can be frozen.
