FLAKY PASTRY (RETEGES [HALYAS] SUTEMENY) | |
1 lb. lean lard scraped 3 c. flour 1 tsp. salt 1 yeast cake dissolved in 1/2 c. warm milk 2 eggs 1/2 c. warm milk 2 tbsp. vinegar 1 egg yolk 1/4 c. sugar Sift flour, salt, and sugar. Add 3/4 pound leaf lard, add eggs and mix by hand. Add yeast mixture, vinegar, and milk. Mix well so dough will be soft. Roll out on lightly floured board to 1 inch thickness, spread the rest of the lard over dough evenly fold over 4 times. Chill. Roll out again and fold over. Repeat this process 3 times. Roll out and cut into squares. Fill each square with nut or lekvar filling. Fold over to shape crescents. Place in pans. Chill for 1 hour. Brush with beaten egg yolk. Bake at 375 degrees for 25 minutes. When cool sprinkle with powdered sugar. |
