FINNISH PASTRY 
3 c. milk
3 sticks butter
1 1/2 c. sugar
3/4 tsp. or 8 crushed cardamom seeds
3/4 tsp. salt
7 eggs
2 yeast cakes
1/4 c. warm water
9-12 c. flour
1/2 c. coffee
1/4 c. sugar

Scald the milk. Add the butter, then sugar and cardamom seed. Cool, then add salt and eggs. Dissolve the yeast in water. Add to batter, then add flour and knead well. Let rise until double, punch down, rise again. Braid. Rise in pans. Bake at 425 degrees 20-30 minutes. Brush with coffee syrup made using coffee and sugar. About 10 minutes before pastry is done, glaze with coffee syrup and continue baking.
