APRICOT BUTTER COOKIES 
2 c. flour
1 tsp. baking powder
Pinch salt
2 sticks butter at room temperature
6 egg yolks
1 tsp. vanilla
1 c. sugar
2 c. apricot jam, warmed up

Mix first 3 ingredients and set aside. Beat the next 4 ingredients in separate bowl. Combine everything and mix at low speed until mixed well. Refrigerate until batter is firm. Shape into 1 inch balls. Bake in greased cookie pan for 8 to 10 minutes in a 350 degree oven.

Spread about 1 teaspoon of jam on a cookie, cover with another cookie and press together.
