APRICOT FILLED COCONUT COOKIE
BARS
 
3 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1 1/4 c. butter
1 c. coconut
3/4 c. chopped walnuts
2 (12 oz.) jars apricot jelly or jam

Sift together flour, baking soda and salt. Set aside. In a large bowl, cream butter and sugar until fluffy. Add flour and blend until mixture resembles coarse crumbs. Stir in coconut and walnuts. Turn half of batter into a greased jelly roll pan.

Top with remaining crumb mixture covering jelly completely. Bake for 20-25 minutes or until golden brown. Cool completely and cut into bars.
