LEMON COCONUT COOKIES 
1 pkg. lemon cake mix
1/2 c. milk
1/4 c. shortening
1/2 tsp. lemon extract
1 1/2 c. shredded coconut

Turn cake mix into large bowl. Add milk, shortening, flavoring, and coconut; blend thoroughly. Dough will be somewhat stiff. Drop by teaspoonfuls onto greased baking sheets. Bake at 400 degrees for 8 minutes or until golden brown. Makes about 4 dozen chewy cookies.

I use Crisco oil.
