APRICOT COOKIE BARS 
1 stick butter (1/2 cup)
1/4 c. sugar
2 eggs, separated
1 1/2 c.flour
1/2 tsp. salt
1/2 tsp. baking powder
1 1/2 c. sugar
1 tsp. vanilla
1/4 c. chopped nuts
1 sm. jar of preserves (10 oz.) any flavor

Cream butter and sugar. Mix all ingredients together, using only egg yolks. This makes a stiff batter. Press into an 8 x 8 x 2 inch baking pan, buttered. Put one small jar of preserves or jam on top of batter any flavor.

Beat egg whites and 1 1/2 cups sugar until stiff peaks form. Add 1 teaspoon vanilla. Spoon this on top of preserve layer. Sprinkle 1/4 cup chopped nuts on top of meringue. Bake at 350 degrees for 30 minutes. Cool in pan, then cut into squares. Makes 16 to 18 bars.
