CARROT LAYER CAKE 
1 1/2 c. vegetable oil
2 c. sugar (brown or white or combination)
4 eggs
2 c. flour
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon (optional 1/2 tsp. nutmeg)
2 tsp. vanilla
3 c. well-drained grated carrots

ICING: (CREAM CHEESE)
1 stick butter
1 (8 oz.) cream cheese
1 (1 lb.) box confectioners' sugar
2 tsp. vanilla

Combine in mixing bowl, oil and sugar, add 4 eggs and beat well. Add flour, baking soda, salt and cinnamon and nutmeg. Combine and beat well. Add vanilla and carrots and mix well. Divide batter into two 9 inch greased and floured pans. Bake at 325 degrees for 60 to 65 minutes.

METHOD FOR ICING: Mix butter with cream cheese, add sugar and vanilla and beat well. Refrigerate after frosting.
