EASY POTATO PANCAKES 
2 large potatoes, peeled and chunked
1 medium onion, quartered
1 egg, beaten slightly
1/4 tsp. baking powder
1/4 cup all-purpose flour
1/4 cup unseasoned matzo meal
1/4 tsp each salt and pepper
olive oil, for frying

Place all ingredients, except olive oil in food processor. Pulse until mixture becomes medium consistency.

Put about 1/4-inch oil in non-stick pan over medium heat. Use tablespoon to measure out pancakes. Reduce heat slightly, and sauté slowly until brown then flip gently, and cook until brown on the other side, and pancakes are cooked through. Drain on paper towels.

Serve with applesauce and/or dairy sour cream.
