GERMAN POTATO PANCAKES 
2 lb. potatoes
1 carrot
1 onion
1 egg
2 tbsp. flour
1 tsp. salt
1/4 tsp. nutmeg
Parsley flakes
2 tbsp. shortening

Grate potatoes, carrot and onion. Add egg and salt, nutmeg and parsley flakes. Add flour gradually, mix thoroughly. Drop 1 tablespoon at a time into hot greased frying pan and brown on both sides. Serve with sour cream or applesauce.
