BEST GERMAN POTATO PANCAKES 
4 large potatoes
2 eggs
1/4 tsp. salt (or to taste)

Wash and peel potatoes. Grate into bowl, using large, mesh side of grater. Strain potatoes, shaking constantly until potatoes form ball. Add eggs and salt.

Fry pancakes in oil until brown. Serve with applesauce.
