CRANBERRY FREEZE 
Excellent for Thanksgiving or Christmas

6 1/2 c. ring salad mold
3 c. cranberries, chilled or frozen, chop samll amounts in blender or food processor at a time
1 1/2 c. sugar, blend with chopped berries, set aside in blender
2/3 c. crushed pineapple, well drained
1/2 c. walnuts
8 oz. cream cheese, softened to room temperature
8 oz. Cool Whip

Into blender, add pineapple, walnuts, then cream cheese. Spoon into mixing bowl. Fold in Cool Whip. Put in ring and freeze for at least 2 hours. Thaw for 15 minutes, serve wedges on a leaf of lettuce.
