“MOMMA BEAL'S BANANA NUT BREAD” IS IN:

MOMMA BEAL'S BANANA NUT BREAD 
2 cups white flour
1/2 tsp. salt
2 eggs
2 tsp. baking powder
1/2 cup (1 stick) butter, softened
1 1/2 cups ripe mashed bananas
1 cup sugar
3/4 cup chopped walnuts or pecans

Sift flour with baking powder and salt. Cream butter, gradually beat in sugar. Add an egg at a time, beating well after each addition.

Add mashed bananas, mix well. Blend in sifted ingredients. Fold in nuts.

Pour into greased 9x5x3-inch loaf pan.

Bake at 325°F for 1 hour and 25 minutes.

Serve warm or cold with butter.

I've made this recipe several times now. It's great as-is, though in my oven it only requires 1 hour to bake. It's also really adaptable in terms of adding different ingredients. I mash the bananas and put about a teaspoon of vanilla in it. I've also substituted mini chocolate chips for the nuts. This bread is dense, easy to slice and cubes well for use in chocolate fondue too!

Great recipe, but the required time was off. I baked this also for only one hour in my oven at 325°F. So watch your time!

This is a very good recipe. However I made a few changes. I added 2 tsp of cinnamon,1 tsp of vanilla. Also I only let it cook on 325°F for 1 hr... Comes out perfect every time. Thanks Jessica.

Very tasty but mine turned out to be more of a cake than a nice heavy bread. I used ingredients that I had on hand -- self rising flour, coconut oil, the suggested 1 tsp. vanilla, tbsp. cinnamon, and I baked for 1 hour. Thank you for the recipe, Jessica.
