SWEET POTATO SOUFFLE 
3 or 4 fresh yams or 1 lg. can yams (40 oz. or 2 lb. 8 oz. can)
1 c. milk
1 c. sugar
1 stick butter
4 eggs
1/4 tsp. nutmeg or cinnamon (to your likes)
1 tsp. vanilla
1 c. coconut

If using fresh yams, boil until soft. Peel and cut into large mixing bowl or the can if using. Add all ingredients together except coconut. Beat well (mixture will be soupy). Pour into 9 x 11 inch baking dish. Put coconut on top. Bake at 350 degrees for 30 minutes or until firm.
