SWEET POTATO SOUFFLE 
1 lg. can yams
2 c. coconut
1 1/2 sticks butter
1 tsp. lemon flavoring
1 1/3 c. sugar
1 c. chopped nuts
3 eggs, beaten separate

Beat yams with your electric beater. Add butter, sugar, egg yolks, and egg whites that are beaten separate and fold in. Add coconut, nuts and flavoring. Pour in greased dish 12x7 and bake 40 minutes at 400 degrees. Top with cherries before you put in oven.
