GARLIC DRESSING 
1 egg yolk
1/3 c. red wine vinegar
1 tbsp. granulated sugar
1 tbsp. chopped garlic
Salt and freshly ground black pepper, to taste
1 c. best-quality olive oil

Combine egg yolk, vinegar, sugar, garlic and salt and pepper to taste in the bowl of a food processor fitted with a steel blade. Process briefly.

With the motor running, slowly dribble in the olive oil. Taste, correct seasoning if necessary, and transfer to storage container. About 1 1/2 cups.
