GARLIC ROASTED RED POTATOES | |
2 lb. red potatoes 1/4 cup olive oil 1 tsp. paprika 6 cloves garlic, minced 1/2 tsp. salt 1/2 lemon, squeezed 2 tbsp. Parmesan cheese, for sprinkling Cut potatoes into quarters and place in an 8x8-inch baking dish. Mix olive oil and lemon juice add rest of ingredients. Pour over potatoes and mix until all potatoes ate covered. Sprinkle with cheese and cover with foil. Bake at 400°F for 50 minutes uncover and bake for 10 minutes longer. Submitted by: Judy Brannock |
