TOMATOES PARMESAN WITH BROCCOLI 
2 pkgs. frozen, chopped broccoli
2 tbsp. butter
1 tsp. grated lemon rind
Pepper to taste
Grated Parmesan cheese
2 tbsp. chopped onion
1 c. sour cream
Salt to taste
4 firm, ripe tomatoes

Heat oven to 400 degrees. Cook broccoli according to directions on package. Drain well. Saute onion in butter until golden. Add it with sour cream and lemon rind to broccoli. Salt and pepper to your taste. Arrange in bottom of a buttered baking dish. Slice tomatoes in thick slices; salt and pepper them and sprinkle both sides with Parmesan cheese. Arrange these in 1 or 2 layers on top of broccoli. Sprinkle top with more cheese. Bake 20 minutes or until tomatoes are done and the top is a little brown. Serves 6 to 8.
