PARMESAN TOMATOES 
4 med. tomatoes, peeled and halved crosswise
2 tbsp. fine dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. minced parsley
1/4 tsp. salt or to taste
Pepper to taste
2 tbsp. butter (for greasing dish)
1 sm. clove garlic, minced (optional)

Place tomatoes cut side up in greased shallow baking dish. Mix garlic, bread crumbs, cheese, parsley, salt and pepper. Sprinkle over tomatoes. Bake in preheated 400 degree F oven until tomatoes are tender, but still keep their shape and tops are golden brown, about 10-15 minutes.

Serves 4.
