VELVET EGG CUSTARD PIE 
4 Eggs (slightly beaten)
1/2 c. Sugar
1/4 tsp. Salt
1 tsp. Vanilla
2 1/2 c. Milk (scalded)
1 - 9-inch unbaked pie shell
Nutmeg

Thoroughly mix eggs, sugar, salt and vanilla. Slowly pour into hot milk. Sprinkle nutmeg on top.

Bake at 475°F for 5 minutes, reduce heat to 425°F and bake 17 minutes more.
