COCONUT POUND CAKE 
1 1/2 c. Crisco (or 3 sticks)
3 c. sugar
5 eggs
3 1/2 c. plain flour
1 c. milk
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
1/4 tsp. lemon
1 c. grated coconut

Cream Crisco and sugar. Add eggs, one at a time. Beat well after each addition. Sift together flour, baking powder and salt. Add alternately with milk to above mixture. Beat well. Add vanilla, lemon and coconut. Bake in well greased and floured tube pan for 2 hours without opening door at 300 degrees.
