SOUTHERN BANANA PUDDING 
1 pkg. (4 serving size) Jello vanilla pudding
2 egg yolks, slightly beaten
2 1/2 c. milk
1 lg. bag vanilla wafers
3 or 4 lg. bananas, sliced and lemon juice to dip slices in

MERINGUE:

2 egg whites
Dash of salt
1/4 c. sugar

Combine pudding mix, egg yolks and milk in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Arrange layer of vanilla wafers on bottom and sides of 1 1/2 quart baking dish. Add a layer of banana slices (that have been dipped in lemon juice) and then pudding. Continue layering wafers, banana and pudding, ending with pudding.

Beat egg whites with salt until foamy throughout. Gradually beat in sugar and continue beating until mixture will form stiff shiny peaks. Spoon lightly onto pudding, sealing edges well. Set under broiler in oven 5 to 8 minutes or until meringue is lightly browned. Serve warm or chilled. Makes 8 servings.
