SCALLOPED POTATO CASSEROLE 
1 c. sour cream
1/4 c. melted butter
1 1/2 c. shredded cheddar cheese
1/2 tsp. salt
1/2 c. cracker or bread crumbs
1 can cream of chicken soup
1/3 c. sliced green onion
3 lbs. red potatoes, peeled, boiled & cubed
1/8 tsp. pepper

Mix sour cream, soup, butter, green onions and 1 cup cheese in lightly greased 3 quart casserole. Gently stir in potatoes, salt and pepper. Top with remaining 1/2 cup cheese and crumbs. Bake in preheated 350 degree oven for 30 minutes.
