GROVER WILSON'S HOT TAMALES 
1 fat hen
2 lbs. lean fresh pork (opt.)

Cook and remove meat from bones. Shred fine, salt and pepper to taste. 1 qt. tomatoes 1 pt. catsup 1/3 bottle Tabasco sauce 1 tsp. red pepper 1 tsp. mace Salt to taste Yellow cornmeal to make thick

Mix everything in the broth EXCEPT meat. Mix in cornmeal and cook until well done. Cool. Shape with a dab of meat and one or two olives in center. Roll in corn husks or parchment paper and tie ends.

Also need a pan of clean water to wet hands when shaping tamales. These freeze well. To heat: Steam from freezer to eat in about 30 minutes. Approximately 30.
