POTATO NACHOS 
Cheese and hot peppers top potatoes for a great-tasting snack.

3 slices bacon
3 med. potatoes
2 tbsp. water
1 1/2 c. (6 oz.) shredded Cheddar cheese
1/3 c. sliced jalapeno peppers or ripe olives

Place bacon in single layer on bacon rack or in 10 x 6 inch microwave-safe baking dish. Cover with paper towel.

Microwave (high) 4 to 5 minutes or until crisp. Set aside.

Scrub potatoes; slice 1/4 inch thick. Place in 1 1/2-quart microwave-safe casserole. Add water. Cover with casserole lid.

Microwave (high) 4 to 5 minutes or until almost tender, stirring once. Remove lid. Then microwave (high), uncovered, 2 to 3 minutes or until tender.

Arrange potatoes in single layer on 3 microwave-safe plates. Top potatoes with cheese and peppers or olives. Crumble bacon and sprinkle over potatoes.

Microwave (high) one plate at a time, uncovered, 30 to 60 seconds, or until cheese is melted, rotating plate once. Serve warm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
