POTATO PANCAKES | |
2 eggs 3 c. diced raw potatoes 1 sm. onion, quartered 3 tbsp. flour 1 tsp. salt 1/4 tsp. baking powder Put all ingredients in order listed in blender container. Cover and blend on speed 7 just until all potatoes go through blades, about 10 seconds (do not over blend or potatoes will be liquefied). Pour small amount into a hot, greased griddle or frying pan. Fry until brown on both sides, turning once. Yield: 18 pancakes. |
