EASY POTATO PANCAKES | |
2 eggs 1/2 sm. onion 1 tsp. salt 2 tbsp. flour 3 c. cubed raw potatoes Some olive oil for frying Put eggs, onion, salt, flour and 1/2 cup potatoes into a blender, cover and process on grate until potatoes have gone through the blades. Stop blender and add remaining potatoes, cover and process on grind only until potatoes have gone through blades. DO NOT OVERBLEND. Pour (a small amount for each pancake, about 2 tablespoon) onto a hot well oiled griddle. Fry until golden brown. Drain on paper towels before serving. Serve as side dish or with applesauce for a main meal. Makes about 12 to 15 pancakes. |
