GINGER LIME DRESSING 
1/2 c. low fat yogurt
2 tbsp. lime juice
1/4 tsp. crushed fresh ginger

Place yogurt in a strainer with cheese cloth and let it drain (a coffee filter is a good substitute) in the refrigerator. Amount will be reduced by half. In a small bowl combine yogurt with lime juice and ginger. Will keep in the refrigerator for about 1 week. Stir before using. Makes 3/4 cup.
