BANANA COOKIES DROP (10 DOZEN) 
1 lb. shortening
1 3/4 lb. sugar
3/4 oz. vanilla
2 lb. bananas, peeled
8 (13 oz.) eggs
2 1/8 lbs. flour
1 oz. baking powder
1/2 oz. salt
1 tsp. baking soda
Sugar, as needed
Cinnamon as needed

Cream shortening, sugar and vanilla until light and fluffy. Stir in bananas and beat until well mashed. Beat in eggs 1 at a time. Add sifted dry ingredients. Mix just enough to blend. Drop on ungreased baking sheet. Sprinkle with mixture of sugar and cinnamon. Bake in a moderately hot oven (400 degrees) 12 minutes.

NOTE: Use ripe bananas. Raisins may be added if desired.
