ITALIAN SAUSAGE AND VEGGIES 
2 tbsp. olive oil
2 1/2 lbs. sweet Italian sausage, sliced
2 lg. green bell peppers
2 med. onions
1 (6 oz.) can tomato paste
1 (12 oz.) can stewed tomatoes
2 med. zucchini

In large skillet, brown sausage in olive oil. Add chopped bell peppers and onions to skillet and cook until tender. Stir in tomato paste and stewed tomatoes and continue to cook until well heated. Add zucchini and cover. Cook until squash is tender. Serve over bed of cooked egg noodles or rice.
