GRANDMA'S POTATO SALAD 
8-10 med. potatoes, boiled and cool overnight
8 hard boiled eggs
1 med. onion, chopped
3 pickles, diced
1 tsp. salt
1 tsp. pepper
1 tsp. pickle juice
1/2 tsp. mustard
1/2 c. mayonnaise
Paprika and parsley for garnish

Take cooled potatoes, remove skin and cube. Place in bowl along with chopped onion and diced pickles. Separate egg yolks from hard boiled eggs and place yolk in smaller bowl. Dice up white part of egg and add to potatoes, onion and pickles. Set aside.

Now, with a fork, crumble up the egg yolk, add salt, pepper, pickle juice, mustard and mayonnaise. Mix together with creamy. Pour over potato ingredients and mix together thoroughly. Garnish with paprika and parsley and cool for 2 hours. Enjoy. Serves 8-10.
