RED KIDNEY BEANS AND RICE 
2 c. red kidney beans, or any other bean, pigeon peas, pinto
1 pkg. cream of coconut
2 cloves garlic
1 tbsp. pimiento seed
3 stalks scallions
1 tbsp. thyme
Salt & pepper to taste
1 lb. rice, Carolina or UNCLE BEN'S®

Wash beans and put to boil. While the beans are boiling, add cream of coconut, garlic and pimiento seed. Cook until beans get tender. Season with thyme, scallions, salt and pepper. Add rice, bring to a boil, t hen lower flame and let it steam for 1 hour or more until rice is soft. Serves about 12 people.

I didn't follow all since didn't have all ingredients. Just used as guide for flavoring. I used thyme, salt, pepper, scallions....thanks...thyme is nice flavor with red kidney beans.
