DOUGHNUT LIKE COOKIES 
4 eggs, divided
1/2 cup superfine sugar (see note)
2 cups flour, sifted
10 tablespoons butter, unsalted and softened
2 tablespoons decorating sugar (sanding sugar)

Preheat oven to 350°F. Line a cooking sheet with parchment paper.

Cook 2 eggs, saving yolks and discarding whites. Save whites from raw eggs and mix raw yolks with cooked yolks. Stir in separately, superfine sugar and then flour, a little at a time. Dough will be very thick.

Break off walnut-sized pieces, roll into into cylinders with palms of hands and arrange on cookie sheet. Of saved egg whites, beat into soft peaks, brush over cookies and sprinkle with decorating sugar. Bake at 350°F until brown.

Note: Superfine sugar can be made by processing granulated sugar on high about 15 seconds until almost powdery. Remember to cover blender with drying towel because sugar will fly all over.
