R.'S NO FAT CAKE 
2 whole eggs or egg beaters substitute
3/4 c. honey
1 c. nonfat yogurt
1 tsp. vanilla extract
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 tsp. cinnamon, optional
1/4 tsp. nutmeg, optional

Beat eggs until thick and light. Add honey, yogurt and vanilla extract. Continue beating until well blended.

In a separate bowl, mix flour, baking soda, baking powder and salt (also nutmeg and cinnamon if used). Stir flour mixture into egg mixture until completely blended. Turn batter into greased and floured 8 or 9 inch square pan. Bake at 350 degrees for 30-35 minutes. Whole wheat or oat flour may be used in this recipe.
