Instead of sour cream - Puree 1% cottage cheese (small curd is best) in blender until smooth. Mix in an equal amount of non-fat yogurt and a squeeze of lemon juice...Yummee! Instead of cream or egg in creamy salad dressing - Substitute buttermilk for the egg and oil in your favorite recipe for Caesar salad dressing. Or Substitute the non-fat sour cream (recipe above) for sour cream in any recipe. Or Use non-fat yogurt in French and Thousand Island dressings. Instead of white sauce - Puree 1% cottage cheese (small curd is best) in blender until smooth. Thin with skim milk. Mix with sauteed onions and garlic and add some basil. Or Puree steamed cauliflower. Thin with buttermilk and season with a little grated Parmesan cheese and nutmeg. Instead of cream in creamy soups - Cook your choice of vegetables with cubed potatoes or precooked white beans and defatted stock until soft. Puree. This eliminates the need for cream. Or Process non-fat cottage cheese until smooth. Use in place of cream. Add just before serving to avoid curdling. Or Substitute buttermilk for cream in broccoli, turnip, or carrot soups. Add just before serving. |
