SKILLET UPSIDE DOWN CAKE 
1 can pineapple slices
1/4 c. butter
2/3 c. brown sugar
1 c. flour
3/4 c. white sugar
1/4 c. butter
1/2 c. milk
1/2 tsp. vanilla
1 egg

Preheat oven to 350 degrees. Drain pineapple and save one tablespoon syrup. In 10-inch iron skillet melt 1/4 cup butter. Add brown sugar, stirring until sugar melts. Remove from heat. Arrange pineapple in skillet.

In a bowl mix sifted flour and sugar. Add 1/4 cup butter and milk. Beat with electric mixer. Add egg and beat 3 minutes. Pour in skillet. Bake 40 minutes.
