CHERRY SKILLET CAKE 
1 c. sugar
1 c. milk
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. shortening
2 c. cherries
1 c. sugar
1 c. hot water

Mix sugar, milk, flour, baking powder, salt, and shortening together and place in a greased 9 inch skillet, then mix cherries, sugar, and hot water together and pour over the first mixture. Bake in moderate oven (350 degrees to 400 degrees) for 45 to 50 minutes. Cool and serve with Cool Whip. (You can also use peaches, pineapple, or raspberries.) No eggs are used in this recipe.
