VEGETABLE RICE CASSEROLE 
1 (2 1/2 oz.) jar mushrooms, sliced and drained
1/2 c. minute rice, uncooked
1 (10 oz.) pkg. broccoli
1 (10 oz.) pkg. cauliflower
1 tbsp. butter
2 tbsp. onion, chopped
1 (10 3/4 oz.) can cream of chicken soup
1/4 c. milk
3 oz. or full 1/2 c. cheese cubes
1 (8 1/2 oz.) can water chestnuts, drained and sliced

Run hot water over frozen vegetables to thaw. Mix all ingredients. Bake, uncovered, in 2 quart greased baking dish for 35 minutes at 350 degrees.
