BROCCOLI RICE CASSEROLE 
1 tbsp. vegetable oil
1/2 c. chopped celery
1/4 c. chopped onion
1 can Campbell's cream of broccoli soup
1/4 c. milk
1 c. diced or 1 (8 oz.) jar pasteurized process cheese spread
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
2 c. cooked rice

In saucepan in hot oil, cook celery and onion until tender. In bowl, combine soup and milk, stir in celery mixture, cheese, broccoli and rice. Pour into 6x10 inch baking dish. Sprinkle with paprika. Bake at 350 degrees for 30 minutes or until hot. Serves 8.

I was visiting my daughter in New York and on Thanksgiving realized we did not have the cheese for this recipe, and could not find it anywhere, so we bought chipotle quest and tried that, actually was really good, a little tex-mex flavor to our Thanksgiving dinner.
