BROCCOLI CASSEROLE 
3 or 4 c. chopped broccoli
1/3 c. finely chopped onion
4 tbsp. butter
3 tbsp. whole wheat pastry flour
1/2 c. vegetable cooking water or broth
3/4 c. grated cheddar cheese
3 eggs, well beaten
1/2 c. whole wheat bread crumbs
1 tbsp. butter

Preheat oven to 325 degrees. Melt 4 tablespoons butter in large skillet over medium heat, stir in onion and broccoli; saute, covered until broccoli is barely tender. (If using frozen broccoli, drop about 20 ounces into a small amount of boiling water, cover and cook quickly. Add to skillet and use the cooking water later in the recipe.)

Stir flour into the onion-broccoli mixture and let cook a minute or so. Add cooking water or broth; stir in cheese until well blended. Remove from heat and gradually stir in eggs. Pour into a well greased 1 1/2 to 2 quart casserole. Pour crumbs over and dot with butter. Bake for 30 minutes or until done. Serves 8.
