SHRIMP CREOLE 
3 onions, sliced
1 bunch celery, chopped
4 tbsp. bacon fat
2 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 green pepper, chopped
2 tbsp. chili powder
3 c. cooked peas, drained
1 1/2 tsp. vinegar
2 tsp. sugar
3 c. cleaned cooked shrimp
1 c. uncooked rice
2 c. water
3 c. cooked tomatoes

Brown onions, celery and pepper slowly in bacon fat. Blend in flour, seasonings; add water slowly, stirring constantly. Simmer 15 minutes slowly or until done. Add remaining ingredients, continue cooking for 10 or 15 minutes. Add shrimp when rest of ingredients are done. Do not over cook shrimp. Serve over rice.
