CREAM OF ZUCCHINI SOUP 
4 c. zucchini, diced
8 oz. cream cheese
1/2 c. onion, chopped
2 tbsp. butter
3/4 tsp. tarragon or dill
1 tsp. garlic salt
1 tsp. dry chicken broth
Optional Parmesan cheese
Optional bacon bits

Cook zucchini with 1 cup water, in saucepan, until tender. Puree zucchini with broth, then add cream cheese and puree more. Set aside. In saucepan brown onion in butter until tender. Add pureed zucchini and cream cheese to onions. Add tarragon or dill, garlic salt and dry chicken broth. Heat. Serve with Parmesan cheese or bacon bits.
