SCALLOPED CELERY WITH TOMATO 
5 c. sliced celery
2 c. canned tomatoes
1 onion, chopped
1/2 tsp. salt
2 tsp. sugar
Pepper
3 tbsp. soft butter
2 tbsp. flour
Buttered cracker crumbs

Combine celery and next 5 ingredients in a saucepan. Bring to a boil, then simmer for 5 or 6 minutes. Stir in a smooth mixture of the butter and flour; cook, stirring until thickened. Pour into greased casserole; sprinkle crumbs over top. Bake at 375 degrees F for 15 to 20 minutes, or until topping is browned.
