APRICOT DUCKLING 
8 oz. dried apricots
5 c. water
1/4 tsp. ground cloves
2 c. brown sugar
2 tsp. salt
1 pkg. frozen duck pieces, thawed
Soy sauce

NOTE: Bake at 350 degrees for 1 3/4 hours or until tender. Serve with apricot sauce.

Soak apricots in water overnight. Simmer until soft. Put cooked apricots and juice into blender, puree. Return to pan and add cloves, brown sugar and salt. Simmer 5 minutes, watching to keep from scorching. Place duck in pan with skin side up, season to taste. Brush with soy sauce.
