SPINACH SPECIAL 
1 stick butter
1 pkg. frozen chopped spinach, cooked & drained well
(Swiss Chard works well too)
1 box Jiffy corn muffin mix
6 oz. cottage cheese
1/2 tsp. salt
4 eggs
1 sm. onion, chopped

Melt butter in a 2 quart casserole. Pour butter into batter of other ingredients. Mix until ingredients are moist. Put ingredients back into the 2 quart casserole, which is coated with excess butter and bake 40-45 minutes at 350 degrees.
