STUFFED PASTA SHELLS | |
1 lb. ground beef 2 cups chopped celery 1 cup chopped onion 2 cups chopped carrots 1 (8 oz.) bag shredded white cheese mix (mix in) 1 (8 oz.) bag shredded yellow cheese mix (save for last) 1 (16 oz.) box jumbo pasta shells 2 (15 oz. ea.) jars marinara sauce (your choice) 1 (15 oz.) can diced tomatoes (Hunts) Cook pasta until firm and set aside. Combine celery, onions, carrots and ground beef together and cook until carrots and celery are soft. Drain off any grease and add white cheese mix to the ground beef until melted. Stuff ground beef mixture into pasta shells and arrange by rows in a 9x12-inch casserole dish. Mix marinara and diced tomatoes together and pour over the top of stuffed shells. Layer yellow cheese mix on top of the marinara. Bake at 350°F for about 15 minutes or until cheese is melted. Serves 4 to 5 (cut quantities in half for smaller portions). Submitted by: Eric Hooper |
